Banana Swiss Roll, gluten-free

Banana Swiss Roll, gluten-free

For surprise guests, you can whip up an impressive and delicious Swiss roll. Bonne purées are a great choice for pastry fillings, and the banana purée is also delicious as is.

Swiss Roll:

4 eggs
1 ½ dl sugar
1 dl potato starch
½ dl unsweetened cocoa powder
2 tsp baking powder

Filling:

200 g vanilla curd
1 dl Bonne Banana Purée
1 dl strawberries

Topping:

2 dl whipped cream
2 tbsp sugar
1 tsp vanilla sugar
strawberries and physalis

Beat the eggs and sugar until fluffy, add the previously mixed dry ingredients and spread the pastry on a round baking tray lined with baking paper. Bake at 225 degrees for about 7 min. Tip out onto baking paper or a kitchen towel.

Beat the vanilla curd and Bonne Banana Purée, and spread on the cooled pastry. Slice some strawberries on top. Roll relatively tightly and place on a serving tray.

Beat the whipped cream, season with sugar and vanilla sugar. Spread in a fluffy layer on top of the roll. Decorate with strawberries and physalis.
