Charlotte is an impressive and unusual dessert, where a bowl lined with Swiss roll slices is traditionally filled with a frozen filling. You can easily prepare an Ice Cream Charlotte as a back-up dessert and store it in the freezer, well in advance of your special occasion.
1 ½ dl sugar
1 dl potato starch
½ dl wheat flour
2 tsp baking powder
3-4 dl Bonne Peach Purée
1 1/2-2 l vanilla ice cream

Beat the eggs and sugar until fluffy, add the previously mixed dry ingredients. Spread the dough on a baking tray lined with baking paper and bake at 225 degrees for about 7 minutes. Tip the pastry onto sugared baking paper and let cool. Spread Bonne Peach Purée on top and roll the dough up. Cut into thin slices, and line about a 2-litre low bowl with clingfilm first. Stack the Swiss roll slices on top of the clingfilm into the bowl.
Soften the ice cream slightly and pour it into a bowl. Trickle Bonne Peach Purée into it. Line the bowl with clingfilm and freeze at least overnight. Tip the Charlotte onto a serving tray and decorate with whipped cream rosettes if you wish. Serve with some extra Bonne Peach Purée for sauce.
Tip! Prepare this well in advance before the party as a back-up cake in your freezer. Can be stored in the freezer for several weeks.
