The fresh thickened peach juice is like a cheerful splash of colour for your snack or dessert.
1/2 l Bonne Peach Purée
6 dl water
3/4 dl sugar, or to taste
2 1/2 tbsp potato starch
1/2 tsp vanilla sugar, or grated vanilla bean, to taste
1 dl whipped cream
2 tbsp sugar
1 tsp vanilla sugar or grated vanilla pod, to taste
1/2 dl toasted almond slices
Put the peach purée, water, sugar, potato starch and vanilla sugar into a pot.
Heat, mixing continuously, until boiling point.
Bring to a simmer, but do not boil.
Check the taste.
In case the juice is too thick for your liking, you can add some water.
If you want the juice to be thicker, keep adding potato starch mixed with water to the steaming mixture. Bring to boil. Check the taste.
Serve the thickened juice as is, or with a dollop of whipped cream.
Beat the whipped cream and season with sugar and vanilla sugar.
Squeeze a dollop of cream on top of the thickened juice.
Sprinkle with a few pan-toasted almond slices.
