The Mango-Pavlova is a stylish dessert which you can decorate with seasonal berries and fruit purées.
4 egg whites
2 ½ dl sugar
1 tsp vanilla sugar
1 tbsp Maizena
1 tsp wine vinegar
Filling:
2 dl whipped cream
200 g curd
1 dl sugar
2 tsp vanilla sugar
2-3 dl Bonne Mango Purée
Decoration:
a few kumquats
2 dl green grapes
2 kiwi fruits
Beat the egg whites into a white foam.
Add the sugar, a little bit at a time, mixing continuously.
Finally, beat in the Maizena and the wine vinegar.
Using a spoon, place an airy layer of this mixture on an oven tray lined with baking paper.
Bake at 125 degrees for 1 h 15 min, or until the meringue is crunchy and light.
Let cool.
Beat the whipped cream and mix in the curd.
Season with sugar, vanilla sugar and mango purée. Check the taste.
Spread the mixture lightly on top of the Pavlova and decorate with fruit.
