Sweet Potato Patties

Sweet Potato Patties

200 g Bonne Sweet Potato Purée
1 dl finely chopped cashews
1 tbsp ground ginger
200 g boiled kidney beans
200 g boiled white beans
0.5 tbsp baking powder
0.5 dl Maizena
1 lime’s grated peel
fresh chopped coriander
finely chopped spring onion
salt and pepper

Puree the boiled beans and add the sweet potato purée to the mix.

Add the seasoning, herbs and the grated lime peel.

Mix in Maizena, baking powder, and finally the chopped nuts.

Season with salt and pepper.

Let the dough rest for at least 1 hour before cooking the patties.
