500 g peeled, diced potato or sweet potato
700 g vegetable stock
1 yellow onion
1.5 tsp toasted, ground coriander
3 dl Bonne Jänö Juice
2 dl creamy coconut milk
Sauté the potato and onion in a drop of oil over low heat until the potatoes start to disintegrate.
Add the toasted and ground coriander, salt and pepper, and vegetable broth.
Bring the soup to boil, let boil until the potatoes are soft.
Add Jänö Juice and coconut milk. Mix the soup well, using a whisk.
Serve with fresh diced green apple and sliced spring onion.
