5 dl Bonne Sweet Potato Purée
5 dl chicken stock (or vegetable stock)
5 dl coconut milk
2 lemongrass stalks
10 lime leaves
1 sliced yellow onion
3 tbsp ground ginger
0.5 tbsp coriander seeds
2 garlic cloves
Fry the onion, garlic, lemongrass, ginger and coriander over low heat.
Add the lime leaves, chicken stock and sweet potato purée, bring to boil.
Let simmer for about 10 minutes, then add the coconut milk. Simmer for another 2 minutes. Sieve the soup and serve.
